  1. Your Charro beans are fantastic! I always keep several containers of them in my freezer. They can be thrown in lots of dishes—tacos, casseroles, chili, or just eaten over some cooked grains.

  4. One of my faves lately is a pasta salad:
    lentil pasta, “California blend vegetable mix” (frozen bag for convenience but it’s essentially broccoli, cauliflower, and carrots), and a goddess dressing I make (tahini, cider vinegar, garlic onion, Italian mix herbs, soy sauce or liquid aminos). Sometimes I add green peas too. It’s THEE BEST.

    Also a cabbage stir fry is GREAT for volume. You can add all sorts of veg and a good hot sauce. Yum.

  6. Today, I have a very large pot of red quinoa and oat groats cooked together. On the side, I have collard greens and fruit. That literally what I’m eating today, tomorrow, and the next day. I might put some hot chile powder and lime juice on my grains. But that’s breakfast, lunch, and dinner for the next three days! It’s a little boring, but VERY satisfying! EASY EASY EASY!!! People, break free from the insidious habit of trying to maximally please your palate every meal of every day!
