Sheet Pan Pancakes:

2 tbsp ground flax seeds mixed with 6 tbsp of water to make flax eggs
2 c whole wheat flour
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt (optional)
1 c plant milk
3/4 c water
1/4 c apple sauce
2 ripe bananas mashed
1 tsp vanilla extract

1 c thawed (previously frozen) strawberries to top
1 tbsp make syrup

Combine ground flax seeds with 6 tbsp water and allow to sit to gel. Set aside for about 10 mins.

Whisk together dry ingredients.

Mash the bananas.

Add all the remaining wet ingredients (including the flax eggs) to the dry ingredients and whisk together until combined.

Preheat oven to 425 F.

Evenly spread the batter on a parchment lined baking sheet. Top with the strawberries and a drizzle of maple syrup.

Bake in the oven for 20 mins (or until a tooth pick comes out clean).

Personally, I cut this into 8 individual pancakes and served 2 per serving.

Broccoli and Chickpea Salad

1 grated carrot
1 head of broccoli chopped
1 small onion diced
1 bell pepper diced small
3 tbsp sliced almonds
1 c chickpeas
2 tbsp raisins
2 tbsp dried cranberries
2 tbsp tahini
2 tbsp soy sauce (or alternative)
1 tbsp apple cider vinegar
1 tbsp maple syrup
2 tsp minced ginger
1 tsp Dijon mustard

Combine the tahini, soy sauce, AC Vinegar, maple syrup, ginger and mustard to make sauce.

Chop and prep veggies.

Combine all ingredients together to make broccoli salad.

Black Bean Buddha Bowl:

2 small sweet potatoes peeled and diced – air fry at 450 F for 15 mins

3/4 c jasmine rice cooked in rice cooker with 1.5c water


1/2 small shallot, diced
1 c diced cherry tomatoes
1 lime
1 handful of cilantro
1.5 tbsp minced garlic
1 tsp balsamic vinegar

Combine all ingredients and serve as a “salsa” on top of the Buddha bowl.

“Black Beans”:

1/2 of the diced shallot
Splash of balsamic vinegar
1 can black beans drained and rinsed
1 head of broccoli
2 tbsp tomato paste
1 tbsp chili powder blend

In a non stick frying pan on medium heat sauté the shallot with a splash of balsamic vinegar for 1-2 mins. Add in the black beans, broccoli, tomato paste and chili powder and splashes of water to prevent sticking. Cover and cook for 10-15 mins until broccoli steamed to desired texture.

To serve add rice, sweet potato, bean/broccoli mixture and tomato salsa to bowl. Top with some fresh lime juice and enjoy.

  1. I, too, love the convenience of sheet pan pancakes, but I had never thought to cut them with my kitchen scissors! Great tip! My biggest challenge with pancakes no matter how I make them is not to put too much maple syrup on them. We love maple syrup!
