Fruity Baked Oats: (Serves 6)

2 mashed bananas
4 c oats
1/4 c chia seeds
2 tsp baking powder
2 tsp cinnamon
1/4 c raisins
1 diced apple
1 peeled and diced orange
2 c frozen mixed berries
4 c water

In a 8×14 casserole dish begin by mashing 2 bananas. Add in remaining ingredients and mix well to combine making sure the mixture is level.

Bake at 350 F for approximately 45 mins.

Cut into approximately 6 servings and enjoy.

Sweet Potato Sushi Bowl:

Peel and dice 1-2 sweet potatoes. Air Fry at 450 F for 15 mins.

Prepare Sushi rice:

3/4 c sushi rice
1 c water
2 tbsp rice wine vinegar

Simply combine ingredients into rice cooker and allow to cook.

Veggie sauté:
2 c red cabbage
1 c edamame
1 tbsp soy sauce
1/2 tsp sriracha

In a non stick frying pan on medium heat sauté the cabbage and edamame with the soy sauce and sriracha. Cover to allow the veggies to steam. This takes about 10-15 mins stirring occasionally.

To serve I divided the rice, potatoes and veggies into 2 bowls. I topped each bowl with some leftover cucumber and 1/2 of an avocado.

Taco Style Soup:

Splash of balsamic vinegar
1 onion
2 tbsp minced garlic
1 bell pepper
1 c frozen corn
1 tbsp minced pickled jalapeños
2 tsp cumin
1.5 tsp chili powder blend *
1 tsp smoked paprika
1.5 c diced and peeled sweet potatoes
1 can black beans, drained (540 ml)
1 can diced tomatoes (796 ml)
4 c water
1 tbsp better than bouillon * or sub veggie broth
1 tbsp lime juice

In a soup pot on medium heat sauté the onion and garlic with a splash of balsamic vinegar. Cover to allow the onions to sweat and stir occasionally for about 5 mins.

Add in the bell pepper, corn, pickled jalapeños, spices and sweet potatoes. Give another quick stir to combine.

Add in the black beans, tomatoes, lime juice and broth.

Cover and simmer for about 20 mins, or until the sweet potatoes are cooked through.

Serve and enjoy!
