🌱Free Recipes:

Wild Rice and Mushroom Gnocchi Soup: makes about 13-14 cups of soup so cut in half if you are not feeding a family:
1 large onion diced
1 cup carrots diced
1/4 cup celery diced
1 tbsp minced garlic
16 oz white button mushrooms
16 oz package gnocchi
2 cups wild rice, cooked ( I cook it in my instant pot according to instant pot directions)
2-3 vegan boullion cubes (https://amzn.to/3kXKTKJ) (affiliate link) its cheaper in the store!
6 cups water
2 cups almond milk
3 thyme sprigs or 1/4 tsp dry thyme
garlic salt / pepper to taste
parsley to garnish
Heat a large pot over medium high heat and saute onions, carrots, and celery until the onions are translucent, about 5 minutes. Then add the garlic and mushrooms. add a little garlic salt and splash of water to help the mushrooms cook down, about 10 minutes. Then add the water, boullion if using, thyme, and bring to a simmer. Once simmering, add the gnocchi and cook for 3 minutes until the gnocchi are plump and floating. Then turn off heat, remove the thyme, add the cooked rice, and almond milk and season to taste with garlic salt and pepper. Garnish with fresh parsley. If you have left overs, the rice may soak up the liquid so just add more almond milk and season when you heat it up the next day.
