3 cups instant oats OR 3 cups plain flour
4 medium to large spotty bananas
3/4 cup sugar – white, brown or raw
1.5 tsp vanilla extract
Optional: 1/3 cup powdered peanut butter
You can leave the oats as they are or blend them into a flour. The two finished products yield different textures. In this video, they were blended. I like both ways but will just leave them as they are in the future.
1. Preheat oven to 180°C (355°F) fan forced or 200°C (390°F) conventional.
2. Peel bananas and mash in a large bowl with a fork or potato masher until mostly smooth with a bit of chunk.
3. Mix in sugar and vanilla extract until dissolved.
4. Mix in oats/flour and powdered PB if using until a thick batter/dough is formed.
5. Form cookies into desired size and place on oven trays lined with baking paper.
6. Bake for 10-12 minutes and check the underside of the cookies by lifting with a spatula or burger flipper. When they’re at your desired level of golden brown, flip and bake for a further 5-7 minutes.
Cool and enjoy! They won’t last long 😉
